About Cornrue

Cornrue Bakery began with an idea. We wanted to bring real bread into the homes and onto the tables of our friends and neighbours in our community of Westport, County Mayo.
In the spring of 2017 Cornrue Bakery was founded by Patrick O'Reilly, and so we began our journey to craft real bread with soul, made with a sense of place and purpose.
Our first home was a borrowed oven, baking overnight in a local restaurant. From these small beginnings, we began to sell our sourdough loaves through a small number of shops in Westport town. Today, with the loyal support of our community, we have grown. We now have a team of bakers and we work from our own dedicated bakery
And of course, we continue to strive to make the perfect loaf of sourdough bread. Each morning we start baking your bread at 6.15am. We are fuelled by our passion for high quality, naturally fermented, real bread. Our ambition is to build an institution that stands for locally produced real food that our community can feel proud of.

Our Story

Did you know?

Naturally, fermented bread is more satisfying, more nourishing, and it stays fresh for longer.

Our community tells us that once they started to eat real bread it really elevated their desire to seek out other high-quality, locally produced real food.

So, now we also stock a quality selection of seasonal vegetables, homemade jams, and natural wines.

Our Values

Community matters.

Our team rises early each morning to create a bakery that is a warm and friendly meeting place for the people of our community in Westport.

Consistency and Excellence.

We strive to deliver the best possible bread and experience for our customers. We don’t compromise on quality or taste; we approach everything we do with professionalism, consistency, and reliability.

Alchemy.

We have a precise and measured process but we also respect that natural fermentation is a special kind of alchemy.

Local economy.

We are always working to help to raise the standard of real bread in the west of Ireland. Our community feels the power that they have to make decisions about how they spend their food euros by putting their money back into our community and our local economy.
